So on Sunday, my B. Boehmei molted and came out at a DLS of 7.5cm. That is the good news.

The bad news is that I noticed last night that my P. Regalis lost a leg and that another one of it's legs is stiff and it looks like it is going to lose that one as well.

I'm not sure what happened really.

It could be a because of a fall, because I believe she is close to a molt. She should molt in the next week or so.

Should I leave her as is? With the other leg being stiff or should I do something about it?

Agree with Martin.
I wouldn't worry too much. I've had a few pokies lose legs, on one occasion more than 1 leg.
And they have always replaced the leg with the next molt. If I remember correctly even Shaun's pokie pulled through, and that was definitely a worst case scenario.
Just make sure there is enough humidity for the molt, and all should be as it must.
Remember, they have been doing this for quite a while before we started interfering...

I will leave her as is. I have checked the humidity and it is a bit higher than usual now. Just in case.

I will give updates as and when I can. We'll have to wait and see if she's okay with the next molt.
